Our Weekly Menu

This weeks menu is ready! We follow the guidelines of Trim Healthy Mama developed by Pearl Barrett and Serene Allison and we encourage you to check out their websitebooks and various social media platforms. The holiday festivities have begun and with it an excitement in the air.  The kids are thrilled for Christmas decorating and baking.

Menu

Monday: Simple Tacos (S or E) For an S version we use low carb tortillas with low fat plain yogurt, cheese, a sprinkle of tomatoes and ground turkey.  For an E, however we use low carb tortillas, bean mixed with ground turkey, mozzarella cheese, tomatoes, corn and other yummy taco fixings.

Tuesday: Spaghetti (E) Made with Dreamfield Pasta or Spaghetti Squash for noodles and ground turkey with low sugar sauce.

Wednesday: Hot Dogs with a Side Salad (S) 

Thursday: Pumpkin Soup (E) * See recipe below

Friday: Low Carb Pizza, crust made with cheese flower Biscuit on page 248 of the book Trim Healthy Table. 

Saturday: Bacon Crusted Chicken Bacon and Chicken!  Yumm!  This is going to be a crowd pleasing meal.

Sunday: Southwestern Meatloaf  Simple yet delicious, this meal will be happy ending to the busy week.

For my Sweet Tooth

Lemon Bars (S)-With Lemon flavor a favorite with my kids, Buttery Lemon Bars are sure to be a hit.

Pumpkin Pie Soup (E)
  • 1 sautéed onion
  • 4 large sweet potatoes cooked
  • 4 cups chicken or vegetable broth
  • 1 cup pumpkin
  • 1 can of white navy beans
  • 1 bag of riced cauliflower
  • 1 tsp sea salt
  • Pumpkin pie spice to taste (I used closed to 1/2 Tablespoon)
  • Dash of cayenne
  • Cinnamon to taste
  • Dash of paprika

Directions:

To cook my sweet potatoes, I wrap in foil, place in the Instapot for 12 mins on manual pressure with a natural release. Let them cool then blend in the rest of the ingredients in the mixer. Place back into the Instapot and set on soup for 30 mins. Top with pumpkin seeds.

November is here and with it fall themed activities for Preschool.  This Thanksgiving themed learning is filled with all things turkey with an emphasis on being thankful.   • Daily have each child write down what they are thankful for on the feathers. Create a display turkey on Thanksgiving for a Turkey Talk.
  • Turkey Talk: Discuss the many ways you are thankful. Use the provided feathers to help prompt the children.

This week is Thanksgiving and with family coming into town, we have some creative meals for our guests.

Monday: Eggroll in a Bowl (S or E) page 63 of the Trim Healthy Mama Cookbookwith our own added additions such as water chestnuts, baby corn and sprouts

Tuesday:  One Pot Bean Mung Dal  (E) My husband and I enjoy the flavor and high protein found Mung Dal. This week we searched for a kid approved recpie. Hopefully the kids like this hearty dish.

Wednesday: Drive Thru Sue Chicken Quiche (S) page 118 of the Trim Healthy Table Cookbook

Thursday: Thanksgiving!! (S) Insta-pot turkey with our recipe of Acorn Squash Pecan Bake (See below) and a side of veggies is our simple but healthy plan!

Friday: Low Carb Pizza, crust made with cheese flower Biscuit on page 248 of the book Trim Healthy Table.

Acorn Squash Pecan Bake

1 egg
2 Acorn Squash
¼ cup xylitol
1/4 cup butter
1 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon nutmeg
1 cups milk or whipping cream

Special Ingredients
1/2 cup baking blend
1/4 cup xylitol
1/4 cup butter
1/2 cup chopped pecans
1/2 teaspoon cinnamon

Cook acorn squash in the instapot for 12 mins on manual, cool, peal, cut and scoop out the seeds. Mash squash and ad ¼ cup of xylitol, 1/4 cup butter, 1/2 teaspoon allspice, 1/4 teaspoon nutmeg.  Mix well.  Beat in cream and egg.  Whip well with mixer.  Pour into greased baking pan.  Combine special ingredients and mix until crumbly.  Mix in pecans and 1/2 teaspoon cinnamon.  Sprinkle over the top of the squash mixture.  Dot with butter.  Bake at 400 degrees for 35-40 minutes.

Harvest Week

Time for some Harvest Fun!

November is here and with it fall themed activities for Preschool. This week we are learning all about fall harvest.  With Thanksgiving themed learning about farm, deer, squirrels and other fall activities, your preschool child will enjoy learning all about harvest! This set includes a letter D for deer word hunt, a color by numbers, a pattern and simple counting page and an entertaining squirrel song.

Rodan+Fields Update

Never did I ever envision my schedule to look like coffee dates, playdates, and carpool like it does now. I always envisioned I would be a mom, but I had always believed I would still be teaching. Do I miss teaching, yes! Do I love education, of course! But, right now I’m loving life with my three beautiful children and handsome husband. Our Weekly Menu and Pumpkin Oatmeal Cookies

This weeks menu is ready! We follow the guidelines of Trim Healthy Mama developed by Pearl Barrett and Serene Allison and we encourage you to check out their websitebooks and various social media platforms. The first full week in November is already here and it’s a short week for our menu.  For a fun little mini vaca we are headed to see friends in the DC area.  For the trip, I’ll be baking cookies and kale chips for snacks.

Monday: Chicken Enchilada Stuffed Spaghetti Squash (S) page 132 in the Trim Healthy Table. We are a spaghetti squash kick thanks to the local Farmers Co-op with their delicious vegetable falls choices. However this is their last week for the season, so we will have to wait for the spring season to start again.

Tuesday:  Chicken Bacon Rice Casserole (S) page 140 in the book Trim Healthy Table. You won’t miss the traditional rice as you substitute riced cauliflower into this yummy dish.

Wednesday: Baked Chicken in the Insta Pot (E) Whole Roasted Chicken (E) One of my favorite Insta-pot recipes, this quick and easy roasted chicken is easy as it is delicious.  With the extra juice, we freeze and save in muffin tins for chicken stock.

Thursday: Carb Friendly Pizza & Movie Night (S/E ), Page 282 of the book, Trim Healthy Table. Pizza Night!!  It’s the night before vacation and the kids sure love their weekly pizza movie night.

Friday: On family Vacation!

Sunday:Sushi Night (E or S) Page 277 in the Trim Healthy Table Cookbook. This is our first attempt at making sushi on our own.  We LOVE our sushi so we figured why not give this recipe a try.

Pumpkin Oatmeal Cookies

 

Oatmeal Cookies

Ingredients

  • 2 cup Instant Oats
  • 1 cup THM Baking Blend
  • 1/2 Cup Sprouted Rye or Spelt flour
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2 tsp. Ground Cinnamon
  • Pinch of Sea Salt
  • 2 tbsp. Organic, Unsalted Butter, Melted
  • 1 Tablespoon Black Strap Molasses
  • 1 Tablespoon Honey (optional)
  • 4 Egg Whites (or 3/4 cup)
  • 1/4 cup pumpkin
  • 1 tsp Vanilla Extract
  • 1/2 cup Swerve

Other Optional Items to Add to your mix:

  • 1 cup Finely Diced Red Apple
  • 1 cup Raisons
  • 1 sugar-free chocolate chips

Directions:

  1. Mix together the dry ingredients: oats, baking blend, four, baking powder, baking soda, cinnamon and salt. Set aside.
  2. In a separate bowl, combine the melted butter, egg whites, molasses, pumpkin, honey and vanilla and swerve.
  3. Mix the wet and dry ingredients together, then add in any of the optional items.
  4. Preheat the oven to 325.
  5. Line a baking sheet with a silicone baking mat, scoop out a tablespoon for each cookie. Bake at 325 for 13-15 minutes then cool for 2-3 minutes before removing from the cookie sheet.
