Each month we will have a different themed adventure map. Weekly projects will be outlined on the map and detailed on the blog  This month, I created a beach scene that will later be used for a fun game board and reading chart.

Looking for a way to organize your summer goals, check out our Summer Family Adventures.  Each day, during the the week, we have an academic goal, life skill or sports activity.  Weekends are reserved for a fun family adventure and chosen from our families Summer Bucket List. Here are our week 4 goals:

Monday: Graphing with Math – In order to prepare for next months summer bucket list, I’ll have the kids request their favorite activities and create a bar or pie graph to display their results.

Tuesday: Life Skill Discovery- Planning our road trip and adventure ahead, our kids will learn how to prepare for a camping get-away. They will also work with us on some basic camping lessons this weekend.

Wednesday: Art Class- Painting Patriot Pictures and creating goodbye gifts with a 4th of July theme.

Thursday: Sports Day Gymnastics is the sport of the day with our oldest working out at her Martial Arts Class.

Friday: Movement-  Dance Break!!

Our house is empty and we are in temporary lodging for the week.  With that in mind, we needed to be creative with our meals to avoid eating out. So, what did we pack to help?  Our Instapot traveled with us along with our camping gear. Our favorite one-pot meal from last weekend was Hillbilly Chicken (S). We will defiantly put that back on the family menu sometime soon. The Butternut Squash Bean Enchilada Casserole was also a a yummy option. We meal plan using the Trim Healthy Mama lifestyle. Monday: Low Carb Stromboli (S) With the now famous cream cheese and mozzarella bread, I know this is going to be a favorite meal this week. We didn’t get a chance to make this meal but we are both excited to try it.

Tuesday: Whole Roasted Chicken  Delicious poultry in less than 30 minutes and a one pot clean up, yes please!

Wednesday: BBQ PorkChops   Take a peek at this recipe, this looks amazing!  We can’t wait to try this treat.

Thursday: Leftovers or eggs for dinner (S or E)

Friday: Salmon and Veggies, As a salute to six years near the beach, fish is on the menu tonight.

Saturday: lettuce bun hamburgers

Sunday: Hot Dogs over the campfire.

Monday: Exploring Science – 

Tuesday: Life Skill- Cleaning Bathrooms, our kids will practice the art of cleaning. Here is our bathroom checklist.

Wednesday: Money Math- We will practice counting coins and may even take a trip to the dollar store.

Thursday: Sports Day This week the kids are taking swimming lessons.

Friday: Art/Science-  Drawing Dragons and creating fire

Meal Plan Monday

Over the weekend we enjoyed some wonderful family time in Louisiana.  What’s better then enjoying some snuggles with babies, play time with cousins and visits with siblings? We wanted to squeeze every bit of time with the family so our meal plan didn’t get written up until today.  Here is our meal plan for this week.

Our house is now empty as we prepare for our move. Consequently we planned easy and simple meals keeping back our Instapot and our camping gear to hold us over for the next few weeks.    With that in mind, here are our one-pot meals to fill our family’s tummies. Monday: Low Carb Alfredo Chicken (S) Delicious but minus all the carbs this healthy option will be a favorite for my husband and I.

Tuesday: Philly Cheesesteak Sloppy Joes– with low carb tortillas in place of hamburger buns. (S) I’m excited to try this new recipe!

Wednesday:Low Carb Stromboli (S) With the now famous cream cheese and mozzarella bread, I know this is going to be a favorite meal this week.

Thursday: Leftovers or eggs for dinner (S or E)

Friday: Low-carb pizza (S)

Saturday: Hillbilly Chicken (S) Like the bacon wrapped  chicken from a couple weeks ago, this is a similar find with a creative yummy twist.

Sunday: Butternut Squash Bean Enchilada Casserole (E) My sister-in-law pointed me in the direction of this tasty meal. We are excited to try this casserole.

Monday: Life-Skill Preparing and Packing for a trip – Our kids will learn why lists are important as they sketch their own and help us pack for the move. Family Trip Packing List

Tuesday: Exploring Science Discover a local beach and learn about the creatures who call that habitat home.

Wednesday: Music Break– Practice on the ukulele and guitars, begin to learn the basics of reading music.

Thursday: Sports Day This summer the two younger kids are enjoying a few summer gymnastic lessons while the oldest loves her martial arts.

Friday: Cooking with Math. Measuring out Trail Mix for our Road Trip.

On the road again!! Our family is traveling to see family this week and meet the newest family member a sweet little boy.  The kids are sure excited to have some cousin playtime and we can’t wait to see my brother and sister-in-law!

Another trip is planned for our little crew and this week we are headed to see family. We are all excited to meet our newest nephew and have some cousin playtime!  In addition, this week had to be easy & quick meals since we have packers coming to load up our house-hold goods.  A fun and action packed week, it will surely be one to remember. Pan Seared Chicken with Strawberry Mango Salsa

For the Chicken

  • 1 pound chicken
  • 1/2 cup Egg whites
  • 2 low carb tortillas
  • 1/2 cup parmesan cheese
  • Italian Spices
  • Salt and Pepper
  • 1 tsp. Nutritional Yeast
  • Coconut Oil Spray
  1. Into a blender, place two low-carb tortillas, 1/2 cup parmesan cheese, a sprinkle of salt and petter, a tsp. of nutritional yeast, a varsity of Italian Spices to your mix and blend into a meal.
  2. Dip chicken first into the egg whites and dredge through the tortillas mixture to coat on each side.
  3. Spray a large skillet with coconut oil and place over medium heat. Cover, and continue cooking 3-5 minutes, turn over over and cook for an additional 3-5 minutes or until chicken juices run clear. Cover with mango salsa and serve warm 
Strawberry Mango Salsa

Ingredients

  • 1 cup mango cut into cubes
  • 1 cup strawberries cut into cubes
  • 1/2 cup blueberries
  • 1 can diced Rotel tomatoes, drained
  • 1/2 cup corn cooked or raw
  • 1 Tablespoon Lemon Juice
  • 1/4 cup feta cheese
  • cilantro chopped
  • 1/4 cup red onion chopped

Combine all above ingredients, mix and place onto of prepared chicken.  Feeling spicy, add a jalapeno or two.

Lavender Blueberry Pie Filling
  • 4 cups blueberries
  • 1/4 cup xylitol
  • 1/2 cup lemon juice
  • 1 tsp. cinnamon
  • 1/4 cup baking blend
  • 1 tsp gelatin
  • 1 tsp. dried lavender

Combine all above ingredients and toss to coat blueberries.  Place into a prepared pie crust, cover and bake at 375 degree for 35 minutes. Uncover bake for an additional 10 minutes.  For a pie crust, consider using a low carb option from Trim Healthy Mama.

Blueberry Farm 

Nestled against the backdrop of rural Florida, Baker is home to numerous fruit farms. Strawberry season has just ended it’s spring fling. Now, juicy blueberries and plump blackberries are making their debut. What’s better then a bowl full of juicy berries, a warm blueberry pie or a decadent berry loaded muffin? So, for our first family adventure, we traveled to an Organic U-Pick Blueberry Farm.  Hosted by a lovely local couple, this hidden gem is worth the short drive.

We drove up to their home and then knocked on their front door to announce we had arrived. They loaned us buckets for berries, gave us quick instructions and we headed off on our adventure.  Thankfully we were there by 9:00am because when the sun starts cooking and the humidity gets heavy in Florida, the kids (and parents) wilt fast.  Our kids held on for a little bit looking for the largest and juiciest berries.  Then as they scampered off to play in the shade, my husband and I continued to fill our pails.

Berries were plentiful, large and sun-kissed. We quickly filled our buckets. After about half an hour, we had picked 6 pounds of berries from only a couple of bushes. We headed back to their house, paid $1.50 (cash only) per pound and received a bonus gift; a page of their favorite recipes.  Keep track of your visits – each trip you receive a new selection of delicious blueberry recipes to try.  What’s more fun thn a trip to the berry farm where you are treated like family?  We will be back! Now for some blueberry pie!

Week 1 Adventures

Monday: Science Experiment- make parchment paper. Click this link to see a video of how we created our paper.  It was a quick, easy and fun craft that took no more then 15 minuets.

Tuesday: Writing- from yesterday’s paper making the kids created stories and scrolls.

Wednesday: Art Class– a local artist and friend hosts an class for kids Wednesday and Thursday mornings.  We are headed over to the Chill in the morning , where she’s teaching, to paint.

Thursday: Sports Day This summer the two younger kids are enjoying a few summer gymnastic lessons while the oldest loves her martial arts.  Today is also the oldest birthday!

Friday: Cooking with Math. We will be baking a cake for her birthday party with the kids help.  However if you are looking for a terrific resource projects with easy steps for grades pk-2, check out “On My Own: Art, Cooking & Life Skills“. We will be using this resource throughout the summer.

Blueberries and blackberries are ready to be picked.  We hope to fill a couple buckets of fresh fruit.  We may also make a quick stop at the local beach to enjoy the beach, before we move.
