Sugar-Free Fudge Bites

With the new year here, I’m focused on eating healthy.  However, I have major sweet tooth!! It’s times like this I am so thankful I found Trim Healthy Mama! This decadent fudge is in my freezer ready to grab and go when my sweet craving calls. Originally I wanted to make the two ingredient fudge from THM Blogger, My Montana Kitchen . When I went to gather the sugar-free sweetened condensed milk, I couldn’t find any locally.  So I researched another THM blogger Joy Filled Eats for her version.  Combining the two recipes, here is the yummy fudge bites I created:

Fudge Bites (S)
2T. Butter
1/2 cups xylitol
1/4 cup heavy cream
1 egg yolk
1 page of Lily’s chocolate Chips
Over medium heat melt heat butter, xylitol and heavy cream until sauce thickens.  Let cool for a couple minuets then add egg yolk.  Rapidly stir so the egg yolk doesn’t “scramble” Cook for an additional 3- 5 mins. Add bag of chocolate chips and blend.  Once the mixture cools a bit, pour into silicone ice-cube trays and place in the freezer to set.
